Francesco Illy founded illycaffè in 1933. Illet’s 1935 invention, considered a blueprint for modern espresso machines, revolutionized coffee preparation. His innovative packaging method was based on pressurization and enabled illy’s initial export to Sweden and the Netherlands in the 1940s. Francesco Illy’s nitrogen packaging method remains the standard for preserving and improving the freshness of coffee during transportation and storage.
Francesco’s son Ernesto earned a Ph.D. in chemistry and joined the company in the late 1940s. The passion for learning started in its own lab dedicated to coffee chemistry and sparked illy’s formal science and technology research efforts.
Francesco Illy, from Hungary, travels from Vienna to the coffee city Trieste after the end of World War I.
In 1933, he founded Elie Cafe, based on the dream of serving the best coffee in the world.
illycaffè holds its innovative nitrogen compression packaging system as a patent. This system is still being used to package Illi coffee products. This allows properly cooked coffee to travel around the world while maintaining aroma and freshness.
